Vinification

In steel truncated conical vats at controlled temperature with emptying system (Délestage) and pumping over for about 18/20 days.

In 5000 litre Slavonian oak casks for 15 months

Climate trend

In 2005, a rather harsh winter generated a large water reserve also thanks in part to some light snowfall at the end of February. Low temperatures in early spring delayed budding. The month of June was characterized by high temperatures, which helped the development of the vine with a very well balanced production of bunches per plant. In July and August, temperatures were below average, with some rain at regular intervals. As a result, grape ripening was slightly delayed, but with interesting aromatic complexities, thanks to good temperature fluctuation in September.
